

The Wagyu in this meal is sourced from a small, local farm in Casino, NSW. This farmer usually only has 50 cattle on his property at one time. We first seal the meat on a hot grill to lock in the moisture and flavour and then slow roast the beef in the oven until tender. Served with a locally smoked bacon, chive and cheddar butter with a side of broccolini and roasted potatoes.
